Healthy Hollandaise Sauce




I LOVE eggs Benedict...I mean, who doesn't on a Sayurday morning? And I always find Saturday morning to be hard because it's the time during the week we aren't rushed as a family in the morning so I like to those "more exciting" breakfast!

So here it is...my "healthier" version of Hollandaise Sauce💕✌🏼️

Ingredients:
1/4 cup plain Greek yogurt
2 tbsp lemon juice
1 large egg yolk
3 tbsp organic butter, melted
Himalayan salt and pepper to taste

Directions:
1. Fill a large saucepan 1/4 full and bring to a boil. Place a heat resistant bowl onto the top of the pot that fits snugly like a lid.
2. In the bowl, whisk together yogurt, lemon juice and yolk. Add salt & pepper.
3. Stir mixture consistently for 5 minutes or until your sauce starts to thicken.
4. Remove from heat and whisk 30 seconds. Return to pot for 30 seconds, remove 30...repeat this step until your sauce reaches consistency of mayo.
5. Remove from heat. Add butter and stir consistently for 3-4 minutes or until cooled. 

One servings = 2 tbsp.  pour your sauce over eggs & tomato on toast or use as a sauce for fish.
